brrrr. That’s really all there is to say about the weather. I decided that today’s freezing temps were a perfect excuse to bake, with the awesome side effect of warming up our seriously under-insulated house. I had never made these muffins before but they turned out to be quite delicious.
PB & J muffins (recipe from Pillsbury)
2 cups all-purpose flour
1 and 1/2 teaspoons salt
1 tablespon baking powder
1 cup milk
2 large eggs
2/3 cup sugar
1 cup creamy peanut butter
1/3 cup vegetable oil
1/2 to 3/4 cup jam or preserves
Preheat oven to 375, wipe on or spray some vegetable oil on your muffin pan (or use liners.) Stir dry ingredients together, add wet ingredients (except for the jam) and stir till just blended (don’t over-mix!) Fill the muffin pan halfway up, add a dollop of jam in the center of each cup, top off with the rest of the batter and a sprinkle of sugar. Bake 18-20 minutes. Call some friends over, and pour yourselves a glass of milk. Yummy.
